Cucumber with Feta dressing

2-3 medium to large cucumbers peeled and thinly sliced

1 teaspoon of salt

¼ cup of apple cider vinegar

1 garlic clove, minced

¼ cup of crumbled feta cheese

¼ cup of yogurt

¼ cup of sour cream

1 teaspoon of Dijon-style mustard

1-2 teaspoon fresh dill finely chopped or ½ teaspoon dried dill

Optional additional crumbled feta cheese to serve on top

Place cucumbers in a colander and sprinkle coat with half the salt. Cover the cucumbers with ice and sprinkle the remaining salt on the ice. Cover with a weighted plate in the sink let drain for at least an hour stirring occasionally. Transfer cucumbers  to a large bowl. Do not rinse the cucumbers.

Combine the remaining ingredients. Pour over the cucumbers. Toss well. Serve chilled with crumbled feta cheese over each serving.  6-8 servings.
