Balsamic Green Bean Salad

The recipe below is for the basic Balsamic Green Bean Salad that is quick and easy but there are many variations of ingredients that you could add such as walnuts, feta cheese, cherry tomatoes, basil, boiled new potatoes, or other depending on your taste. This recipe can easily be reduced in half if you are serving fewer people or increased if serving more.

1 Pound of fresh green beans, stem end trimmed off

2 Tablespoons of finely chopped shallots or onion

2 Tablespoons of chopped garlic

¼ cup Balsamic vinegar

¼ cup virgin olive oil

Salt and pepper

Dried Italian Seasoning  optional

To make the dressing, combine the shallots, garlic, and Balsamic vinegar. Wisk in the olive oil slowly a little at a time. Add salt and pepper to taste.

To prepare the green beans you will need a pot of boiling water and a bowl or pan of ice water. Blanch the green beans by adding them to the boiling water for 2 minutes, remove them from the boiling water and add them to the ice water. When the green beans have completely cooled, drain them and pat them dry. In a bowl drizzle the dressing over the green beans and toss to coat. Taste and adjust the salt and pepper if needed. Add a pinch of dried Italian seasoning. Let sit at room temperature for 30 minutes before serving.
