Cucumber Salsa

Prep Time: 10 minutes

Total Time: 12 minutes

Servings: 6



4 cups of shredded cucumber

2 cups of finely diced tomatoes

¾ cup of minced scallions

1 clove of garlic finely minced

½ cup of any color sweet pepper finely diced

¼ cup of lime juice

3 tablespoons of virgin olive oil or canola oil

2 tablespoons minced fresh cilantro

¼ teaspoon salt

1 finely minced jalapeno or Serrano pepper. Remove seeds for less heat or reduce the amount


1. Combine all the ingredients in a bowl and toss to coat.

2. Chill and serve with tortilla chips or as a salad side
