Grilled Zucchini

2 – Small green or yellow zucchini, about 6 to 8 inches long

Virgin olive oil

Garlic powder

Dried Italian Seasoning or dried Thyme

Salt and pepper

Remove the stem end of the zucchinis with a kitchen knife. Slice zucchinis long ways about ¼ inch thick. Place the zucchini slices in a bowl and coat with olive oil. Sprinkle on a desired amount of garlic powder, Italian seasoning (or dried thyme), salt and pepper. Let the zucchini marinate for at least an hour at room temperature, stirring the zucchini a few times.  Grill the zucchini slices on a medium hot grill for just a few minutes on each side or until you have good grill marks on both sides. They cook relatively quick so should be grilled right before serving.
