Ham, Egg and Pea Shoot Salad

Pea Shoots

I have just recently discovered pea shoots. Pea shoots are the first 6 to 8 inch of the pea plant harvested right before or just after the first blooms appear. Generally they are grown from the seed of snow peas. Pea shoots can be eaten in salads, on sandwiches, add to soups or stir fry’s towards the end of cooking, or just enjoy fresh as they are. Pea shoots are somewhat delicate and should be eaten within a few days of harvest. They can be stored dry in a plastic bag in the crisper of your refrigerator. Pea shoots are a good source of vitamin C and A. You can check the internet for recipes for pea shoots or try the versatile recipe below for a nice fresh salad. You can substitute turkey for the ham and use any salad dressing you like. Enjoy!


Ham, Egg and Pea Shoot Salad

3 Hardboiled Eggs, halved, diced, or sliced

4 Slices of Ham, diced, cubed, or julienned

2 oz Pea Shoots

For The Dressing: 1 tsp of Lemon Juice

1 tsp Dijon Mustard

3 tsp Extra Virgin Olive Oil

Salt and Pepper

Make the dressing by whisking all the ingredients together and seasoning to taste with salt and pepper. Arrange the pea shoots, eggs, and ham on a platter and drizzle with the dressing. Serve with some fresh crusty bread or crackers.
