Sweet Potato Pie

1/3 cup softened butter

½ cup sugar

2 eggs lightly beaten

¾ cup evaporated milk

2 cups mashed sweet potato*

1 teaspoon vanilla

½ teaspoon cinnamon

¼ teaspoon salt

1 unbaked 9” pie shell

*1 pound of whole sweet potato is about 2 cups mashed. You can be a little under or over for this recipe.

In a bowl, cream butter and sugar. Add eggs; mix well. Add milk, sweet potato, vanilla, cinnamon, and salt; mix well. Pour into pie shell.

Bake at 425 degrees for 15 minutes. Reduce heat to 350 degree. Bake 35-40 minutes longer or until a paring knife comes out clean.

Cool before slicing.
