Zucchini Boats

Here’s a great way to use those over grown zucchini’s. You can adapt this recipe many ways by changing the type of ground meat or sausage, using different types of cheese or seasonings, or do a vegetarian type by omitting the meat and adding more vegetable or cooked grain. Below is a recipe I like or you can use the basic guidelines to create your own Zucchini Boat recipe.

2 medium or 1 very large zucchini
1 lb of ground pork or Italian Sausage
1 small onion chopped
1 to 2 cloves of garlic minced
½ cup of chopped shiitake mushrooms, stems removed
½ cup of sweet bell pepper chopped
1 cup shredded provolone or mozzarella cheese
1 cup dried bread crumbs
¼ cup of grated parmesan cheese
2 Tab of melted butter
Salt and Pepper to taste

Trim both ends off of zucchini. Cut zucchini in half lengthwise. Scoop out and discard any large seeds if there are any. Scoop out the remaining pulp leaving about a ½ inch of pulp around the shell. Finely chop the remaining pulp. A food processor works great for this.
In skillet over medium heat sauté the chopped onion until soft then add the minced garlic sauté for another minute. Add the ground meat and stir fry until crumbles form add the bell pepper and mushrooms, salt, and pepper and cook until meat is no longer pink. Remove from the heat and stir in the shredded cheese. Spoon into the zucchini shells and place on a greased baking sheet.
Mix the dried bread crumbs, parmesan cheese, and melted butter and sprinkle evenly over the zucchini boats. Bake in a 350 degree oven for 25 to 30 minutes or until the zucchini is tender and the tops are golden brown.
