Zucchini Brownies

1/3 cup margarine                                                      

1/8 teaspoon baking soda

1 Tablespoon water                                                    

½ teaspoon salt

1 cup brown sugar                                                     

 ¾ cup chopped, unpeeled zucchini

1 egg                                                                            

½ cup chopped nuts

1 teaspoon vanilla                                                      

½ cup butterscotch morsels

1 cup all purpose flour

1/8 teaspoon baking powder

Melt margarine in water in a pan; add brown sugar. Beat well and let cool. Add egg and vanilla. Mix flour, baking powder, baking soda, and salt. Add to mixture. Stir until just combined. Do not over stir. Lightly fold in zucchini and chopped nuts.

Pour mixture into a greased 9-by-9-inch pan. Sprinkle butterscotch morsels on top.

Bake at 350 F for 30 minutes.
